Ingredients
6 slices thick bread (brioche or challah works best), cut into cubes
3 large eggs
½ cup milk (whole or 2%)
1 tsp vanilla extract
1 tsp ground cinnamon
¼ cup granulated sugar
2 tbsp butter (for frying)
Maple syrup, for serving
Instructions
In a medium bowl, whisk together eggs, milk, vanilla extract, and ½ teaspoon cinnamon until smooth.
In a shallow bowl, mix sugar with the remaining ½ teaspoon cinnamon to make the coating. Set aside.
Heat a large skillet over medium heat and melt butter.
Dip bread cubes into the egg mixture, making sure each cube is coated but not soggy.
Add the cubes to the skillet in batches and cook for 2–3 minutes per side, until golden brown and slightly crisp.
Transfer immediately into the cinnamon-sugar mixture and toss until fully coated.
Serve warm with maple syrup for dipping or drizzling.
Notes
Best bread: Day-old brioche or challah gives the best texture, but sandwich bread works in a pinch.
